Is one day enough for Rishikesh?
Yes for the main sights. The Beatles Ashram is 25 minutes from the centre by road, the Lakshman Jhula 10 minutes and Parmarth Niketan 28 minutes, so the day is mostly crossing the river and waiting for the evening aarti. It leaves out the Ram Jhula and the Neelkanth Mahadev temple, which the two-day plan covers.
What is the best order for the day?
The Beatles Ashram first, when the forest is cool and quiet, then the bridge area after lunch, and Parmarth Niketan at dusk for the aarti. Moving between the two banks is the slow part, so ask your hotel which crossing is open and how long it takes that day.
Can you do this as a day trip from Haridwar or Dehradun?
From Haridwar, yes: Rishikesh is about 24 km and 26 minutes away on our routing. From Dehradun the road is about 41 km and 47 minutes, so you could start early, but ending after the evening aarti means a drive back in the dark, so plan the return.
